Espresso Cured Salmon

Espresso may not be the first flavor that comes to mind when thinking about salmon, but think again. The deep, nutty tones of espresso balanced with the sweetness of light brown sugar add vibrancy to the subtle taste of salmon. Pan roast your salmon a bit longer to give it an extra crispy layer of flavor.

Espresso Cured Salmon
4 cups
Espresso Cured Salmon
  • 2 cups Domino® or C&H® Light Brown Sugar
  • 1 cup kosher salt
  • 1 cup espresso

Step 1

Mix all ingredients until well combined.

Step 2

When applying to salmon, generously cover the fish with the cure and let sit for at least one hour in the refrigerator.

Step 3

Remove the cure by washing it off and patting the fish dry.

Step 4

Pan roast fish to your liking.
