Sanding #2 sugar is a large crystal size sugar made from pure cane sugar. It is used for decoration and is known to create a sparkling effect. Sanding #2 also adds a crunchy texture to cookies, muffins, and other baked goods. Due to its large granulation, this sugar will not dissolve when added on top of icing.
